It is recognized internationally that the recommendations contained in the General Principles of Food Hygiene are essential for ensuring that food is safe and suitable for consumption.

And Good Manufacturing Practices (GMP) are part of the General Principles of Food Hygiene.

The focus of GMP regulations is the manufacture and control of food products, achieving the quality objective.

The food industry, and particularly the food processing sector, has relied on the use of GMPs in its effort to ensure the safety of processed foods.

Most of these GMPs are used by many national governments worldwide for monitoring the safety of consumer foods and for inspection of establishments that process, package, handle and store foods.

GMP makes specific demands in terms of the people, facilities, equipment, materials, processes and methods, involved in the manufacture and control of food products. GMP requirements cover all aspects of food manufacturing from employee requirements through facility and equipment design and cleaning.

The application of GMP requires reassign the potential risk of each food hazard in food processing.

Many of the GMPs are directly related to product safety issues, and therefore an integral part of the HACCP program.

GMP and the HACCP system are interrelated and interdependent. Application of GMO requires familiarity with the principles of the HACCP system to ensure a comprehensive approach to food safety.
