Food safety records

There are certain written records or kinds of documentation that are needed in order to verify that the system is working. Record keeping is no doubt the most challenging part of an effective food safety system. Food production and processing department should establish production records and sales record.

Record keeping should be as simple as possible in order to make it more likely that employees will have the time to keep the records. Those reports serve as a reminder that there are steps that need to be taken for safe food handling. It’s also verification that the food was handled properly during those steps – it shows someone is watching. It serve that effective system is in place.

Maintaining extensive records is a time consuming process often requires additional employees and creates a large amount of paper that must be retained for a set period of time.

However, when establishments take the time to develop a detailed documentation process with thorough record-keeping procedures they typically found that their records will help them defend their decision and steps taken to produce safe products.

Managers are ultimately responsible for keeping records, but the best way to keep records is to build record-keeping into an employee’s job description and focus their own work area.
